Happy Earth Day! Here I am making a very green salad while wearing a green dress. I’ll let you in on the secret to green croutons—spinach butter! (Use a food processor to blend 4 cups spinach leaves, 3 garlic cloves, ½ cup unsalted butter at room temperature, and ½ cup grated Parmigiano.) Brush spinach butter on bread pieces and bake at 400F until crisp. Just like garlic bread but better.
